Running a little low on cash? Having some trouble picking a dish to bring to potluck? Fear no more, I have some dishes that are cheap and easy to make just in time for the holidays! If you’re struggling with what dishes to bring to the holiday party, then you’ve come to the right place. Here are two dishes that will sweeten up your guests and give them a little flavor to savor when they leave.

Cheesecake Cupcakes

Supplies:

  • Cupcake pan
  • Cupcake liners
  • Vegetable oil
  • A small hand towel
  • Electric mixer
  • Measuring cups/spoons
  • Small to medium sized bowl

Ingredients:

  • 2 packs of cream cheese
  • 1 Tbsp. Powdered sugar*
  • 1 Cup Granulated sugar
  • 1 Tsp. Butter or butter extract
  • Cream cheese icing*
  • 2 Eggs
  • Vanilla Wafers
  • Any type of berry you prefer*

*Ingredients are not necessary to the baking process.

What do you do-wee-ooh now you’ve bought everything?

**In the style of the Klondike bar song

Now that you have bought all of your ingredients, and gathered all of your supplies, it’s time to prepaaaarrre your baking area!!!

  • Preheat the oven to 350 degrees F (175 degrees C.)
  • Spray the cupcake pan with the vegetable oil (or, if you are using the regular oil, evenly coat the pan with it.)
  • Place the cupcake liners inside each of the placeholders.
  • Place the Vanilla Wafers (Flat side down) in each of the liners.

Now to start mixing and baking!!

***Keep in mind that the mixing process can be very messy, so this is where the towel comes in handy, and make sure you are in an area that doesn’t mind a little mess.

  • Place all of the cream cheese inside of the bow (unwrapped), and use the electric mixer to mix until it becomes fluffy.
  • After placing each of the following ingredients into the bowl, make sure you mix the batter well.
  • Add the granulated sugar and butter extract
  • Add eggs to the mixture, one at a time
  • Spoon the cream cheese mixture over each wafer (Yes, the ones in the pan)
  • Place the pan in the preheated oven and set a timer for 30 minutes, or until the sides are golden brown.
  • Once the cupcakes have cooled completely, place the chosen topping on the top.
  • If you have chosen fruit, powdered sugar can be sprinkled on top

Bacon-Wrapped Potato Bites

Supplies:

  • Knife
  • Medium to large bowl
  • Medium pot
  • Toothpicks
  • Aluminum foil
  • Baking sheet

Ingredients:

  • 1 pound small or medium red potatoes
  • 2 1/2 teaspoons salt, divided
  • 1 1/2 teaspoons minced fresh rosemary
  • 1 tablespoon olive oil
  • Freshly ground pepper
  • 12 ounces to 1 pound thick-cut bacon

What do you do-wee-ooh now you’ve bought everything?

Now that you have bought all of your ingredients, and gathered all of your supplies, it’s time to prepaaaarrre your baking area!!!

  • Preheat the oven to 400°F.
  • Wash and dry the potatoes.
  • Chop them into 1-inch pieces, keeping the chunks roughly the same size even if they aren’t the exact same shape.
  • Put the potatoes in a medium pot, cover with cold water, and bring to a boil.

Now to season and prepare!!!

  • Season the water with 2 teaspoons of salt.
  • Once the water begins to boil, cook the potatoes for 3 to 4 minutes, until you can stick a fork into them and they are soft.
  • (You want the potatoes to be almost, but not fully, cooked through so they won’t fall apart during the next steps.)

 

  • Drain the potatoes and put them in a large bowl.
  • Add the rosemary, olive oil, 1/2 teaspoon salt, and a few grinds of pepper,
  • Toss until the potatoes are evenly coated.
  • Cut the bacon into thirds.
  • Wrap each potato bite in a piece of bacon, securing it with a toothpick.
  • Put the potatoes on a baking sheet lined with aluminum foil spaced an inch or two apart.
  • You may need to cook the potatoes in two batches.
  • Cook the potatoes for 15 minutes, then flip each piece.
  • Cook for another 15 to 20 minutes, until the bacon is cooked through and as crisp as you like it.
